Chef de Cuisine

General Overview:

The Aspen Art Museum is currently transitioning the Rooftop Café to being managed in-house. The Chef de Cuisine will lead the creative vision of the Café will be responsible for managing the day to day operations and menu development. The café is a community asset where our goal is to serve a high quality lunch as well as light food service for morning and after lunch service. The café is open with the museum, Tuesday through Sunday. Our desire is to have a chef driven café and menu, the Chef de Cuisine will have full creative control over the café. The Chef De Cuisine will be responsible for designing the menu, hiring and training kitchen staff, and collaborating with the café and museum management.

Responsibilities:
  • Manage the development, implementation, and monitoring of the AAM’s café, culinary staff, and special projects.
  • Conceptualize and develop menus.
  • Hire and train culinary staff.
  • Oversee inventory, purchasing, and food cost.
  • Order meat, produce, and dry goods on a weekly basis.
  • Maintain and develop new relationships with local vendors and suppliers.


      Requirements and Qualifications:

      • Experience successfully leading in a fast-paced environment and prioritizing demands.
      • Experience developing weekly menus and specials.
      • Experience with fermentation, sous vide, smoking, butchery, vegetable cookery, and speciality ordering.
      • Experience with modern kitchen equipment (Rational systems).
      • Strong interpersonal and collaboration skills.
      • Rigorous attention to detail and accuracy.
      • Excellent written and verbal communication skills.
      • Ability to take initiative and prioritize tasks; excellent time-management, problem-prevention, and problem-solving skills.
      • Knowledge and enthusiasm for contemporary food and beverage, artists, museums, and exhibitions.
      • Comfortable working in a fast-paced, team-oriented, open environment.


      Hours and Work Schedule:


      This is a salaried position requiring availability to manage a cafe that is open from 10AM-6PM Tuesday through Sunday. This position is exempt from the Fair Labor Standards Act and will not receive overtime pay for all hours worked in excess of forty in a seven-day workweek or over twelve hours in a day. Occasional night, weekend or holiday scheduled work is to be expected for special events and dinners.
